Ok, getting a bit fed up of courgettes, but the torrent continues. So, I`ll upload this recipe, possibly just one more in a couple of days, then I`ll hang my hat up – defeated! Not for lack of more recipes, just stamina, or perhaps the will to live in coping with the monster courgettes which keep making their way to my kitchen!
500 gr courgettes, with skins, cubed
400 gr pennes pasta
1 medium onion in chunks
1 vegetable stock cube
1 tsp mustard, french if poss
250 gr cream or creme fraiche
120 gr grated cheese
Bunch parsley chopped finely
1 cup bread crumbs
1/2 tsp thyme, fresh if poss
Boil the pasta, onion and courgette chunks together for 10 mins, in lightly salted water. Reserve 400 ml of the water and drain the rest.
Return the reserved water to the saucepan, add the stock cube, whisk in the mustard and the cream, season. Bring to the boil and remove from the heat. Stir in drained pasta and veggie mix, add half the grated cheese and all the parsley. Tip the pasta mix into a enamel bowl or baking tray.
Mix cheese with breadcrumbs and herbs, pour over the top of the pasta mix and grill till nicely browned.
