Another “throw it all in” dish, simple but very tasty.
3 or 4 large courgettes
- 3 or 4 large ripe tomatoes
- 8/10 medium potatoes
- 300 grm sour curd or feta cheese
- Bunch of mint
- Salt & Pepper
- Olive oil
Slice all vegetables into rings and layer them in baking tray, crumbling the curd or feta in between the layers, along with the mint and the oregano. Add S & P and sprinkle over olive oil, making sure all veggie surfaces are covered. You can add garlic if you like. Cover with tin foil, cook for approx. 90 mins at 170/180 degrees, uncover for the last 20 mins or so, to crispen the veggies.
