Crunchy Biscuits

With or without sesame  seeds, these are just right with a cuppa!

Ingredients 

670 gr olive oil

480 gr sugar

2/3 cup fresh orange juice

1/3 cup raki

2 tsps baking soda

1 tsp ground cinnamon

1/2 tsp ground clove

1/2 tsp ground ginger

Grated lemon peel and its juice

1 kilo all purpose flour

Sesame seeds

Mix the oil, sugar, raki, grated lemon peel and spices in a bowl.  Put the orange and lemon juice in a cup, add the baking soda and stir.  This will bubble, so hold over the bowl with the other ingredients.  Empty into the bowl.  Stir very well till the sugar granules break down slightly.  Add the flour slowly, mixing constantly.  It will be sticky, but not overly stiff.  Leave to rest for a good hour.  This allows the flour to absorb the liquids fully.  Set the oven to 180 degrees centigrade.

Coat your hands with a little olive oil to avoid the mixture sticking if necessary.  Roll into “finger thick” biscuits, dunk in sesame seeds if desired and lay in the baking tray lined with greaseproof paper.  Bake for approx, 30 minutes, depending on your oven.  This quantity will fill two baking trays.  Remember that the oven will have reached full temperature by the time the second tray goes in, so they may need less than 30 mins, but allowing them to cook very well, gives them the lovely crunch desired.
