Courgette Balls (Croquettes/keftedes)


  • 1 kg courgettes
  • 1 cup breadcrumbs
  • 250 gr feta cheese crumbled
  • 100 gr cheese kefalotiri grated
  • 2 eggs beaten
  • 1 clove garlic crushed
  • Parsley chopped fine
  • Mint chopped fine
  • S & P

Grate the courgettes, sprinkle with salt and leave to drain well.  Help them along by taking handfuls and squeezing till moisture drips out.  Mix all the ingredients in a bowl, use your hands, that way you get a good mix.  If the mixture still seems too runny, add more breadcrumbs.  I usually leave in the fridge overnight to allow the flavours to permeate.  Shape into balls, dip in flour and fry in very hot oil.  If you use olive oil, don`t let the oil burn.  Finished product tomorrow!  Excellent freeze.  I usually put surplus into a tupperware container, bagged, in the freezer.
