1 kilo courgettes sliced into rings
3 ripe tomatoes grated
4 large eggs
As much garlic as you like, but 4/5 cloves is ok
Fry courgettes till softened in a little olive oil, add garlic and continue cooking for 2 minutes, drain off any excess olive oil, add grated tomato puree, continue cooking, lower the heat a tadge, add beaten eggs, S & P, stirring constantly till cooked. Serve with Cretan village salad, χωριάτικη and crusty bread.
