Gigantes (1) (Small)

Comfort food for us pj lovers!


2 cups dried butter beans

1 medium onion

2 fat garlic cloves

4 medium carrots

1 red pepper

2 cups grated ripe tomato

Nice bunch herb celery

Knorr vegetable stock cube

1/2 teaspoon sweet paprika

Olive oil

Soak the beans overnight and discard the water.  The next day boil the beans in the pressure cooker for about 1/2 an hour.  Tip the beans into a baking tin, discarding the water.  Pour over the remaining ingredients, and the dissolved stock cube in a cup of hot water.  Mix well and cover with tin foil.  Bake for about one and a half hours on approx. 180/200 degrees, uncover and cook for a further 20 minutes or so, to crispen the surface a little.

Serve with a chunk of Cretan feta on top, olives and crusty bread.
