Grape Must Jelly with Semolina (Μουσταλευριά)

A lovely dessert, using grape must, made with semolina, or flour, as the name suggests, must and flour (μούστο και αλεύρι).  Today I`ve made with semolina.  Simple and super!


7 cups grape must, cleaned

1 cup fine semolina

Sesame seeds

Crushed walnuts or almonds

Ground cinnamon


Pour the must into a saucepan and stir in the semolina using a wooden spoon.  Stir continuously, as it heats, it will begin to thicken.  When it resembles thick honey it is ready.

Pour into small dishes and sprinkle very liberally with cinnamon and the crushed nuts.  Allow to set and keep in the fridge for up to 5 or 6 days.
