Orange Cake (Small)



2 large oranges

2 large eggs

1 cup sugar

1 cup milk

3 tbsps semolina

1 tsp baking powder

350 gr ground almonds

1 heaped tbsp dried cranberries roughly chopped

Vanilla flavouring


1 cup sugar

1 cup water

Piece orange peel


Peel the oranges remove the pips and puree the segments in the blender.   Beat the eggs in a bowl, add the sugar, milk, semolina, pureed orange, baking powder and vanilla.  Mix well.  Add the almonds and the cranberries and pour into a greased baking tin.

Orange Pie (10) (Small)

Bake at 175 degrees for about 1 hour and 10 mins, depending on your oven.

Prepare the syrup, put the sugar, water and orange peel into a pan, stir to dissolve the sugar as you heat.  Boil for just 4 or 5 minutes.  It shouldn`t thicken.

Orange Pie (9) (Small)

When the pie comes out of the oven, pour slowly over the surface and allow it to absorb the syrup.  Serve cold with a dollop of plain Greek yogurt atop.

Orange Pie (6) (Small)

You can vary this one using walnuts and sultanas instead of almonds and cranberries.
