Pumpkin and Sage Pasta



500 g pumpkin, cleaned and chopped into chunks

1 large onion sliced

2 or 3 garlic cloves 

1/2 cup grated parmesan cheese

1 cup cream

10 / 15  fresh sage leaves (depending on the size of the leaf) 

A splash of olive oil

S & P

1/2 tsp smoked paprika (optional)

Place the pumpkin, garlic and a couple of the sage leaves into a roasting tin, sprinkle with olive oil, S & P.  Roast till soft.

Blend the roast pumpkin, garlic and sage to a smooth paste in your blender.

Boil the pasta according to the instructions on the packet.

Fry the onion in a little olive oil.  Add the pureed pumpkin, the remaining sage leaves, cream and cheese, adjust the seasoning, allow to simmer on a gentle heat for 5 minutes or so.  Stir into the cooked pasta.  Serve.
